Provisionist Lab
About the lab

We test it until it's worth your time.

Austin and Houston have been cooking together for over a decade, long enough that "let's just throw something together" has produced some of the best meals either of them has ever eaten — and a few that never saw daylight again. This isn't culinary school. It's just two friends who never stopped chasing the next good bite, and finally decided to point a camera at it.

Somewhere along the way, the kitchen turned into something closer to a workshop. A dish doesn't make it onto the page until it's actually been tested — tried, adjusted, tried again — which is really the whole reason we call it a lab. We'd rather show you the version that took three tries than pretend it was perfect the first time.

The standard. The hands.

Austin

Knows when something's off before he can explain why.

Houston

Knows exactly how to fix it, knife already moving.

Nothing gets served until both agree it's earned its spot.
